Recently I discovered biscotti and simply love them. Can be made in so many variations, simply with nuts or fruits or even chocolate. Homemade crunchy biscotti are absolutely wonderful for morning hot tea or coffee. These dried fruit biscotti are made with dried cranberries, plums, apricots and raisins that bring an amazing taste.

  1. Get 1 and 1/4 cup all-purpose flour
  2. Get 1stick (120gm) unsalted butter
  3. Prepare 3/4 cup granulated sugar

  6. Take 3 tbsp black raisins
  7. Get 1/4 cup mixed roasted nuts
  8. Take 1 and 1/2 tsp baking powder
  9. Make ready 1/2 tsp freshly grated orange zest
  10. Make ready 1 pinch salt

Blend in eggs and anise extract. Sift together the flour, baking powder, and salt; stir into the egg mixture. The fruit mix I used for this recipe includes: apricots, plums, apples, raisins and oranges, but I'm thinking that these dried fruit biscotti would be amazing with a mix of tropical fruits, such as banana, pineapple, mango and coconut or perhaps with a touch of candied ginger and citrus peel. This is my fav biscotti recipe.

Instructions to make Dry fruit Biscotti:
  1. Chop roasted nuts (walnuts, almonds, cashews), dehydrated fruits (mango, papaya, kiwi) and black raisins in small size pieces.
  2. In a big mixing bowl, add soft butter and granulated sugar.
  3. Blend It with a hand mixer until creamy and fluffy.
  4. Add 2 eggs and mix again. Don't over mix, mix until eggs mix well, incorporated to the mixture.
  5. Add in freshly grated orange zest and a pinch of salt. You can also use vanilla essence or other flavour to the mixture.
  6. Sieve together all-purpose flour and baking powder. Fold to the wet mixture.
  7. Also fold in prepared nuts and fruits.
  8. Preheat oven for 10 mins at 180 degree C.
  9. Spoon the mixture in a lined baking tray to make 2 to 3" width log.
  10. With a spatula (dust some flour on the spatula) smooth the sides and top.
  11. Bake them for about 25 minutes or until top becomes golden brown. You can bake them in a cake pan also. Be sure that the thickness of the mixture is less(approx 2").
  12. Let it cool for about 30 mins.
  13. When the cakes become cool, cut into thin pieces (1-2" thickness).
  14. Spread the pieces in the baking tray.
  15. Bake them again at 130 degree C for about 15 mins or until golden brown. Note that for 2nd time baking, no need to preheat the oven.
  16. Leave the biscottis in the tray to cool down completely. At first they may little soft to touch. But after cooling they will be crisp.
  17. Store them in air tight container and enjoy anytime with a cup of tea or coffee.

This is my fav biscotti recipe. You can cook it as is or toss in dried fruit or nuts or chocolate or add flavorings. I can't recall for the life of me where I got it, but I've been making it for a few years now and love it. For Christmas I tossed some dried cranberry's and for a sweet coffee treat I dip the bottom half in melted chocolate.
