Healthy biscotti is one of the most favored of recent trending foods in the world. It’s simple, it is fast, it tastes yummy. It’s enjoyed by millions daily. Healthy biscotti is something which I have loved my whole life. They’re nice and they look fantastic.

Just like the original recipe, you'll bake your ultimate healthy biscotti twice! First, you'll shape the cookie dough into a rectangle on your baking sheet. The dough can be a little bit crumbly and stick to your hands (but we don't want it to be too dry!), so either a rub a bit of neutral-tasting oil on your palms so it doesn't stick. Mix in extracts, lemon juice and zest; add eggs.

The original biscotti didn't include either of these because cookies made with butter or oil usually spoiled much faster, and people wanted their biscotti to last for weeks (and months!) while traveling by land or sea. A recipe that I obtained from allhomemadecookies.com and modified for my own tastes and added Splenda instead of sugar. Biscotti is a wonderful everyday treat, but the addition of licorice-flavored anise plus a dip in dark chocolate turns them into something special. This is a great make-ahead recipe (freeze for up to a month, then dip in chocolate after thawing).

Steps to make Healthy biscotti:
  1. Put the dried apricots into hot water for them to soften for 10-15 min
  2. Then chop the apricots into little pieces
  3. Mix the eggs and coconut sugar or your choice of sweetener. Then add all the other ingredients (i used walnuts and almonds so don’t forget to cut them in little pieces before adding to the mixture)
  4. Then put the soft paste into the oven tray and give it a rectangle shape and make sure that the paste has at least 2cm of thickness
  5. First bake the biscottis at 180 degrees for 30-35 min. Then take it out and cut the biscottis into thin pieces.
  6. Lastly put the pieces into oven tray and bake them at 150 degrees for 15-20 min. for the last and second round. Enjoy!!!:))))
