To begin with this recipe, we have to prepare a few ingredients. You can cook jhala mudhi / spicy puffed rice using 14 ingredients and 5 steps. Here is how you can achieve it.
The ingredients needed to make Jhala Mudhi / Spicy Puffed Rice:
- Make ready 75 gms puffed rice (murmura)
- Take 50 gms spicy indian mixture
- Take 1 tsp mustard oil (traditionally mustard oil is used)
- Take 1/2 large onion finely chopped
- Prepare 1 small piece of cucumber (2×2 inch in size) finely chopped
- Take 1/2 medium tomato finely chopped
- Get 3 tsp finely chopped raw mango (based on availability)
- Get 2 tsp finely chopped coconut
- Make ready 2 large green chilies finely chopped (add as per requirement)
- Make ready 1/2 handful cilantro (dhania) leaves
- Take 1 tsp lemon juice
- Get 2 pinch chat masala
- Prepare 1 pinch freshly ground black pepper
- Get 1 pinch freshly ground himalayan pink salt (optional choice)
In Bengali Jhal means spicy and muri means puffed rice and hence the name. The spiciness of the jhal muri is balanced by added some crunchy fresh cucumbers. It is wholesome and nutritious with the addition of vegetables and peanuts in it. Puffed rice is light to eat and kids love this crunchy snack.
Steps to make Jhala Mudhi / Spicy Puffed Rice:
- Keep aside the puffed rice, spicy indian mixture, and mustard oil as per requirement.
- Cut all the ingredients as per requirement and keep them aside on a large plate for later use. In a food processor coarsely grind half handful cilantro leaves with one large finely chopped green chilli. Keep 2 tsp of this paste on the large plate for latter use. Also arrange chat masala, pepper powder, and salt as per requirement. Cut the lemon and keep it aside. It is better to squeeze the lemon juice just before use.
- In a large bowl take 50 percent of the puffed rice, 70 percent of the mixture and all the other ingredients. Then add 1 tsp lemon juice and mix well. Now add the other half of the puffed rice and mix well.
- Before serving top it with the remaining mixture. It is served in the streets in paper cones. I personally prefer it in paper cones for the feel good factor. You can also serve it in a plate or bowl.
- (Please note: The idea is to retain the crispiness of the puffed rice and mixture. Hence adding half puffed rice in the end and topping with mixture helps retain the crispiness of both.) - - Try it out and post your feedback in the comments section.
