- Take uncooked elbow macaroni
- Prepare butter or margarine
- Get flour

It does not taste exactly like mac and cheese as it is a lot less greasy and doesn't have cheese in (go figure) but it is super creamy, flavourful and does come close! When I saw it, I thought, "Why didn't I think of that?" Such a simple idea and so good.
Instructions to make Rachael's Mac and Cheese:
- Preheat oven to 350
- Cook macaroni in boiling water according to package directions; drain macaroni in a colander and set aside
- Melt butter in a Dutch oven over low heat. Whisk in flour until smooth. Cook, whisking constantly, in 1 minute
- Gradually add milk, cook over medium heat, whisking constantly, 6 minutes or until mixture is thickened and bubbly
- Stir in cubed cheese, garlic powder and pepper. Reduce heat, and stir just until cheese melts. Stir in cooked macaroni.
- Spoon half of macaroni mixture in lightly greased 11x7inch baking dish; sprinkle wiht half of cheddar cheese. Do the same thing all over again with remaining macaroni mixture and cheddar cheese. Top with parmesan cheese.
- Bake at 350 for 20 minutes or until hot and bubbly. Remove dish from the oven
I found this recipe in one of Rachael Ray's cookbooks. When I saw it, I thought, "Why didn't I think of that?" Such a simple idea and so good. When cheese has melted into sauce, add tomatoes. When sauce comes to a bubble, remove from heat and adjust seasonings, adding hot sauce if desired. Important: Don't forget tomato sauce for dunking.
