- Prepare 1 Beetroot- Big sized washed, peeled & grated
- Make ready 3-4 Baby onions(shallots) - peeled and chopped fine
- Get 1 & 1/2 tbspn Garlic & ginger finely chopped
- Take 1 Green chilli finely chopped
- Get few curry leaves
- Get To taste Salt
- Prepare 1 cup Curd (whipped)
- Make ready 1/4 tsp Jeera powder
- Take as required Coriander leaves for garnish
- Get 1-2 tsp Coconut oil
- Prepare 1/2 tsp Mustard seeds
Steps to make Lemon Rice served with Beetroot pachadi !:
- First we shall make the lemon rice.Take a non stick pan or kadhai.
- Put oil and when hot add the mustard seeds,jeera and split urad dal.After it splutters add the chopped onion, ginger, green chilli & curry leaves,then saute well.
- Then add the turmeric powder and salt.
- Put the cooked rice and squeeze in the lemon. Add the peanuts.Mix well.
- Garnish with chopped coriander leaves.Serve hot with any raita,bittergourd chips, papad etc.
- For the beetroot pachadi take a kadhai put the coconut oil and when hot add the mustard seeds.
- After it splutters add the chopped green chilli,ginger & garlic and curry leaves.Saute well till the raw smell goes away.
- Now add the grated beetroot and cook for a few minutes.
- Then turn off the gas.
- When it is cool enough,add the whipped curd, chopped shallots,jeera powder and salt.Then mix well.
- Garnish with chopped coriander leaves,and serve chilled as an accompaniment with your rice.
