I used butter instead of margarine. I also substitute Neufchatel cream cheese for the fat free cream cheese. - Now, sift all the Dry ingredients together in a bowl & set aside… Then, in a separate large mixer bowl add in the eggs & sugar & blend with a hand/electric blender/mixer- blend until it's super smooth & creamy in it's texture with soft peaks
- Now, add in the lemon juice & zests to the melted butter & mix it well enough to combine altogether & pour the mixture into the main batter & give ALL a nice mix with the CUT & FOLD METHOD- Always remember, NOT TO OVERMIX ANYTHING AT ANY POINT to get a super soft, smooth & moist textures and tastes
- Slice the apples thinly in elongated shapes & in a pan put the slices & sprinkle some sugar on it and allow it cook for sometime by covering the pan over a slow heat- The Sugar starts caramelising & the apples too, get cooked slowly in the same- giving out a super delicious smell & rich & thick textures & shine to it- put off the flame & allow it to cool down
- Now, mix this apples mixture into the main batter & give it a quick & gentle final mix and pour it out into the baking pan and tap the pan a few times to release any trapped air inside it & also to give a smoother flattened surface on it's top- At this point, if you wish- can choose to decorate it's top with a few more sliced raw apples and arrange that in a designer manner
- Now, time to put it inside the preheated oven @180C for about 40-50 mins time (depends with the different oven temperatures settings) & then, take it out post checking with the toothpick/skewer taste to come out clean & allow it to cool down in the pan itself for at least another 15-20 mins time & then de-mould it on a cooling rack & let it cool down completely
- Time to garnish the same as per your own choice & preferences & cut them into slices accordingly as per your servings HAPPY BAKING !!!
