- Make ready For nachos sauce:
- Make ready 2 tbsp butter
- Prepare 2 tbsp maida
- Make ready 2 cups milk
- Prepare 1/4 tsp tumeric powder
- Make ready 1/2 cup grated cheese
- Take 1 tbsp white pepper powder
- Take to taste Salt
- Take Few red, yellow and green bell pepper thin sliced lengthwise
- Prepare Small sachet of tomato ketchup
- Take For Chef hat shape nachos.. cutout mould
- Prepare Semi hard Cardboard.(6" square)
NO processed cheese sauces to be found here! Confession time: I feed my family. It is totally a D-I-Y kinda snack recipe where each layer can be Keep the freshly chopped herbs, lemon wedges, sour cream, and extra virgin olive oil in separate. My ideal nachos are topped with golden, bubbling cheese, not drizzled with nacho cheese sauce that often goes cold in three minutes.
Steps to make Loaded Herbs Nachos:
- For Chef hat mould..draw chef hat on semi hard cardboard..one big size 4"by 21/2" and another small size 11/2"by 1". Cut hat shape with sharp scissor…as shown.
- For spicy herbs nachos crisps.. in mixing bowl add and mix all mentioned dry ingredients for making nachos. Add enough warm water to bind into semi soft dough. Apply oil all over the dough and keep cover for 1/2 hour.
- Knead and make 6 equal portions of prepared dough. Take one portion roll into 6-7" diameter thin roti. On it place big size chef hat cutout cardboard mould..cut chef hat shape with sharp knife..as shown. Keep aside.(I made one for presentation)
- Roll out another thin roti..place small chef shape mould on it..and cut into chef hat shape..(from one roti..you will be able to make 3 small chef hat shape nachos crisps). With remaining portions of dough..you can make regular or chef hat shape nachos crisps as required. Dry this prepared nachos crisps for 1/2 hour on paper. Deep fry these prepare nachos crisps in non stick frying pan..in hot oil on medium slow flame till crispy golden.
- Deep fry in hot oil on medium flame till crispy golden. Store in airtight container.
- To make Refried Beans.. in kadhai heat oil,add tomato puree, salt,red chilli powder,garam masala, sugar..cook for few minutes till water evaporates. Add and mix boiled red kidney beans and tomato sauce. Cook for 2 mins. Keep aside.
- In another non stick pan melt butter,add maida and saute for 2-3 mins. Cool for 10 mins. Add tumeric powder and milk and stir constantly so no lumps are formed. As the mixture thickens..add grated cheese,salt and white pepper powder. Mix well. Off the flame. Keep this nachos sauce aside.
- To assemble Loaded Herbs Nachos.. write Cookpad letters on each small chef hat shape nachos crisps with tomato ketchup(from sachet). In plate arrange coloured bell pepper strips in circle as shown. On outer front side arrange small chef hat shape nachos (Cookpad letters).. as shown.
- In center place small cup (overturned).. in gap between cup edge and bell pepper ring..pour nachos cheese. Gently pick up the cup from center.. Nachos sauce ring will be formed as seen.
- In center remaining space, fill with refried beans…as shown.
- Take big chef hat shape nachos crisps. On it edge..do icing with nachos sauce.
- Place gently this prepared Cookpad logo chef hat..on refried beans mixture..as shown. Serve/ relish Delicious Loaded Herbs Nachos immediately.
