Murukku recipe - Murukulu or murukku is a deep fried Snack made with rice flour and dal flour. Chakli, chakuli, chakralu and jantikalu are the other Indian names to these. There are so many varieties of murukku, the one I am sharing here is a basic, very old and standard recipe that is followed by many South Indian women. To begin with this recipe, we have to first prepare a few ingredients. You can cook muruku using 11 ingredients and 6 steps. Here is how you cook it.
The ingredients needed to make Muruku:
- Take 6 cup idli rice
- Take 2 cup roasted gram (pottukadalai)
- Take 10 red chillies
- Prepare 20 curry leaves
- Take 6-8 garlic pods
- Take 2 tbsp butter
- Make ready 3 tsp sesame seeds black
- Make ready 3 tsp ajwain seeds
- Get 2-3 pinch Asafoetida
- Make ready Salt as required
- Prepare Oil to deep fry
Murukku was part of our Sankranti festive food preparations this year. Murukku, also known as Chakli, Murukulu and Jantikalu, is a favorite savory snack in our home. A traditional and classic snack that is crunchy and addictive with a cup of coffee or masala chai. Perfect to serve guests and works great as an after school Indian snack for kids.
Steps to make Muruku:
- Soak idli rice for atleast 5 hours. Drain water and grind it in a wet grinder with very little water.
- While it’s grinding, grind red chilly, curry leaves and garlic with water in a blender/mixie. Add this paste also to the wet grinder to grind along with rice. The batter should be thick as well as soft. We can add water later if required.
- Powder the roasted gram using mixie/blender and sieve it. Add this to the batter along with salt, ajwain seeds, sesame seeds, asafoetida and butter. Mix well. The dough should be non sticky. If it’s not spicy as expected we can add red chilly powder.
- Heat a pan with oil on high heat.
- Fill muruku press with the dough. Grease backside of stainless steel lid or laddle with oil and press the dough in round shape. Drop it in oil. Flip and fry both the sides until it becomes crispy. Maintain high heat throughout the process.
